Easy Southwestern Chili

This easy, plant-based chili is a delicious one-pot wonder and is budget-friendly. Pair it with cornbread or tortilla chips for an effortless meal!

Ingredients
  

  • 2 cloves minced garlic
  • 1 can pinto beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes, undrained
  • 1 cup vegetable broth
  • 1 tbsp maple syrup
  • 1 tbsp chili powder
  • 2 tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp cinnamon
  • salt and pepper to taste

Instructions
 

  • Heat 2 tablespoons of water over medium heat.
  • Add minced garlic and cook until golden brown and fragrant. About 1 minute.
  • Add next 10 ingredients (through cinnamon). Combine and bring to a boil.
  • Simmer on medium-low heat for 15-20 minutes, or until desired thickness.
  • Salt and pepper to taste.
