Easy Southwestern Chili

This easy, plant-based chili is a delicious one-pot wonder and is budget-friendly. Pair it with cornbread or tortilla chips for an effortless meal!

- 2 cloves minced garlic
- 1 can pinto beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes, undrained
- 1 cup vegetable broth
- 1 tbsp maple syrup
- 1 tbsp chili powder
- 2 tsp cumin
- ½ tsp smoked paprika
- ½ tsp cinnamon
- salt and pepper to taste
Heat 2 tablespoons of water over medium heat.
Add minced garlic and cook until golden brown and fragrant. About 1 minute.
Add next 10 ingredients (through cinnamon). Combine and bring to a boil.
Simmer on medium-low heat for 15-20 minutes, or until desired thickness.
Salt and pepper to taste.
